A recipe that was so simple and so good that I had to share!
Well, what does this have to do with a wedding and relationship blog? Maybe nothing. Or maybe "something" if you take into consideration that when most of us get home at the end of the day, cooking a meal for yourself or your partner may not seem like something you feel up for. We all have these days.
And maybe its "something" if your New Year's resolution was to work less and cook more, which I menationed as my own personal goal last week. So tonight, I did cook...and now I'm writing a blog post about cookeing. So I'm not sure if that qualifies as "one step forward and two steps back..." But hey, my husband is in the kitchen washing the dishes so I wanted to take a minute to share.
I want to share the main dish I cooked tonight out of a recipe book (more like a magazine) called Cuisine Tonight for Two: Simple, Healthy, Delicious. I am giving you part of a recipe that you can find on page 6. (I skipped the Mojito glaze because rum and sugar on food is not my thing.) So what I ended up with is a simple season coating for Cornish Game Hens. You could also season chicken if you prefer. It took me about 5 minutes to have the hens in the cooker.
Hen or Chicken Seasoning
1/4 c. olive oil (I used flax oil)
2T brown sugar
1T ground cumin
1T garlic powder (I used fresh minced)
1T dried oregano
Salt to taste.
Throw it all together. I rubbed it over 2 Cornish hens, and cooked my hens as I always do. (I love my convenction cook pot. My husband calls it the Easy Bake Oven for a reason!) Cook up a vegatable just before the hens are ready, and dinner is served.
So if you are cooking for your hubby, or your wife, or if you would like to enjoy a nice meal for yourself without a lot of fuss and left-overs, try this!!
But here's the deal. If you cook Rev. Sherry's suggested recipe for your husband - suggest that maybe it could be his night to clean the kitchen... Or whatever...
Okay, he's finished cleaning up and it is the weekend. So I'm getting off this thing so he and I can spend some more time together. Hope you had a good weekend. Do something nice for yourself in the coming week.
